nana's fideo and chicken soup


Jill Says  •  Fideos are thin noodles, almost like angel hair pasta packaged as little round nests of noodles. As kids, we loved eating this soup and we still do. It’s a favorite with all of the kids in our family. Because the flavors in the soup are so mellow, even the youngest of eaters will enjoy this. It requires very few ingredients and little time to prepare.

serves 4-6
4 nests of fideo noodles (about ½ a package)
½ medium onion, diced very small
2 tablespoons olive oil or vegetable oil
½ cup tomato sauce
6 cups chicken broth, vegetable broth or water
¼ teaspoon garlic powder
salt and pepper to taste
1 cup chicken, cooked and shredded into small pieces

  1. Heat medium-size pot on stove over medium-high heat. When pan is hot, add oil and, using your hands, break up and add noodles. Stirring constantly, cook noodles until brown and toasty.
  2. Next, add chopped onion and sauté for a couple more minutes. Add tomato sauce and stir for a minute more.
  3. Add chicken broth, garlic powder and salt and pepper. Bring to a boil, reduce heat to low and continue simmering until noodles are soft, about 15 minutes.
  4. Now stir in chicken and cook for a couple more minutes, just until the chicken is warm. Serve hot.
