turkey patties for the manly man

Jewels Says  •  It seems that whenever I order a turkey burger in a restaurant, I’m disappointed. They are often heavy and lack flavor. The key ingredient to this version is that I add tiny bits of chopped mushrooms and parsley into the ground turkey, which adds moisture and flavor. The taste of the mushroom is so subtle that even kids will love them! These burgers are so satisfying that my husband makes them and uses lettuce instead of buns. This is one way we eat a little less white flour.

serves 4-6
1 recipe of Meatball Mixture (page 00), formed into patties instead of meatballs
1 head of red leaf lettuce, leaves separated to use as “buns”
few slices of tomato
few slices of pickle
ketchup
mustard
few slices of avocado
whatever else you like on your burger!  I like using the pickled red onion for a little kick!

  1. Heat a nonstick pan or light the grill.  If cooking on the stove, add a glug of oil once pan is hot and cook through, flipping once halfway through.  Serve with the rest of the ingredients.

This same Meatball Mixture is used in the *Beautiful, Clean, Albondigas Soup and in the *Quick Meat Sauce (*see cookbook, The Family Chef). So when you make one mixture, you can use it at least three different ways! Break up the cooked turkey patty and put it on top of a salad.
